Rice Delight

Yield: 6 servings

Ingredients

1 1/2 lbs. ground beef
1 medium onion
salt and pepper to taste
2 stalks celery, sliced
1 1/2 cups water
1 cup uncooked long cooking rice
1 can (10 3/4 oz.) cream of celery soup
1 can (10 3/4 oz.) chicken noodle soup

Directions:

Preheat oven to 350 F. Brown ground beef and onion in skillet until beef is browned. Season with salt and pepper to taste. Add celery and water; simmer for 5 minutes. Place in 2-quart casserole dish. Stir in rice and soups. Bake, covered, 1-1/2 hours.
